Deliciously moist orange almond cake (gluten and dairy free)
As we head into summer, weekend BBQs are inevitable, so if you’re looking for a sweet treat to wow your guests then try this simple and delicious orange almond cake recipe. It is also nutritional and high in protein. The oranges provide vitamin C and almonds are high in vitamin E and healthy fats.
300g ground amonds
1 teaspoon gluten-free baking powder
Optional: flaked almonds
Boil oranges in water for 1-2 hours. Chop oranges roughly and let cool. Remove the seeds but keep the skin on. Blend in a food processor.
Beat together eggs and sugar. Combine almonds and baking powder, then add with orange pulp to the eggs. Fold gently till just combined.
Use baking paper to line a large cake tin (if it is too high, it will take too long to cook). Bake for one hour, or a little longer, till a skewer inserted comes out clean.
Optional : Sprinkle flaked almonds on top before baking.
