Quibebe Soup Recipe

Warm up this winter with this delicious Quibebe (pumpkin) soup recipe.


1 tablespoon olive oil

2 cups chopped onions

1 1/2 cups chopped tomatoes

2 fresh chillies chopped

1 1/2 garlic cloves, diced

8 cups vegetable stock

1 pumpkin, cubed

3/4 teaspoon salt

3/4 teaspoon ground black pepper

1/2 teaspoon sugar

2 1/2 tablespoons chopped fresh parsley


In a large stockpot over medium heat, add the oil. Saute onions, tomatoes, chillies and garlic for about 15 minutes, stirring frequently. Add the vegetable stock and pumpkin. Bring to a boil, then reduce heat to a simmer.

Once pumpkin is tender (about 15 minutes), place soup into a blender in small batches and puree until smooth. Return soup to the pot. Stir in salt, pepper and sugar. Sprinkle parsley on top before serving.
